Vegetable Puff Pastry

 
Thaw frozen puff pastry sheet while preparing filling
  
Filling:
     Spinach 1/2 bunch
     Asparagas    5 to 6 diced
     Gorgonzola cheese  crumbles
     Oysters mushrooms  2 to 3 ozs
     Red marinara sauce  
 
Combine filling ingredients and place in center of pastry sheets.
Drizzle with olive oil and fold pastry into a bag (see picture).
Brush with an egg wash.
 
Bake at 450 degrees for 10-15 minutes or until golden brown.
 
 
Gorgonzola Sauce:
    Salt and Pepper
    1 clove garlic - minced 
    1/4 c Gorgonzola cheese - crumbled
    1/4 c heavy cream
 
Combine garlic and cream in a saucepan and reduce.
Add cheese & season to taste.
 
Assemble: 
    Place puff pastry atop sauce. 
    Garnish with fresh parsley (or your herb of choice),
      pistachios & reserved crumbled cheese.
